St. Paul’s on-the-Hill Commu- nity Food Bank provides food to people who need it in Ajax and Pickering. The eighth annual Pickering Squash Club Golf Tournament, in support of the food bank, is taking place on Thursday, July 20 at Glen Cedars Golf Course in Pickering. “The Pickering Squash Club is giving back to the community,” said organizer Kevin Cahill. To golf, it’s $150 per person, which includes lunch, dinner and prizes. The challenge has been finding a title sponsor, dinner sponsors, cart and hole sponsors. “What a way to get their business out there,” Cahill said of the sponsorship oppor- tunities. Sponsorship packages range from $500 to sponsor a hole, up to $5,000 to be a title sponsor. A special sponsorship package for $1,000 includes a foursome and a hole sponsorship. “Our ultimate goal is to raise $15,000,” said Cahill. All proceeds go to the food bank, which so far in 2017, has helped 2,421 adults and 1,447 children. “We’re holding our numbers,” director Marg Jocz said of the food bank, which she said is seeing about the same amount of people this year, as it did at this time in 2016. However, new people keep finding themselves in need. “We get a new client a week,” said Jocz. The annual golf tournament helps keep the food bank operating. Food donations are always welcome, but this tournament, which garners financial donations, allows those running the food bank to shop for what is needed, when it’s needed. “The gift card donations are always wel- come,” added Jocz. “You can donate online. We have PayPal now.” Cahill feels it’s important to help those who have fallen onto tough times. When he drops by the food bank, it’s clear that people are only there because they need the help, he said. “Clients don’t look me in the eye,” he said. “They don’t want to be here, but lay- offs, the economy, has forced their hand that they need that bit of a security blanket to get them through.” The food bank itself is also looking for a business to sponsor it, in order to give the charitable organization some security itself. “We never know if we’re getting $5 or $500 in donations,” said Jocz. Having a business commit either short- term or long-term, would remove a lot of questions marks and provide some stabil- ity. “We’d be happy to spread the world on our website and let people know you’re involved in the community,” Jocz said. Publication Sales Agreement #40052657 our opinionour opinionour opinion column You see it far too often on Hwy. 401 through Durham Region: drivers going far too fast for the road con- ditions, tailgating and weaving in and out of lanes looking to get that extra car-length ahead while also imperiling the lives of everyone else on the freeway. It’s called aggressive driving. And, if you’re motoring on Ontario highways this year, it all-too-often has resulted in death. This year, the statistics are grim where it relates to aggressive driving on Ontario highways. The Ontario Provincial Police’s latest report on road safety points out there’s been an 80 per cent increase in fatalities caused by dangerous driving so far in 2017. Twenty-seven people have been killed in road accidents this year. By the same time last year, 15 people had lost their lives to accidents where aggressive driving was the cause. To front line OPP officers who bear wit- ness to the highway carnage that aggres- sive driving can cause, the new statistics are truly startling. “It’s really frustrating for us,“ said OPP Sgt. Kerry Schmidt, who’s a part of the OPP GTA traffic management unit. “We see people in a hurry, in a rush, every sin- gle day trying to make up for lost time, and in doing so they’re putting themselves and everyone in their vicinity in danger.” What constitutes aggressive driving? It includes incidents involving speed- ing, tailgating, running through red traf- fic lights, and driving over the shoulder on highways. What is particularly disturbing about the spike in aggressive driving deaths, noted Sgt. Schmidt, is that about half of the people involved in car accidents this year were driving properly, but were involved in collisions with people who weren’t. To anyone travelling provincial high- ways and most especially on Hwy. 401 within the GTA corridor, we hope that the sky-high increase in traffic fatalities due to aggressive driving will give drivers pause and serve as a reminder that the stakes are high when we head out on the roads. The highway is a shared resource and when we all follow the rules of the road, the chanc- es of arriving safely at your destination are much improved. While OPP officers are expected to be out in force to catch aggressive drivers during the Canada Day long weekend, in the interim Ontario drivers should sim- ply slow down and respect the rules of the road. Convocation is an event gradu- ates will always remember and, as new- ly-minted DC alumni, they are now members of a wonderful community of more than 81,000, with many opportuni- ties to stay connected to both their alma mater and each other.  Following my graduation from what is now the Law Clerk Advanced program at DC, I made a point of staying in contact with professors and classmates like Les- lie Wagner, who now teaches at DC in the very program we took together. Leslie is carrying  on the excellence in teaching and mentorship that we were both priv- ileged to receive from our own profes- sors, including the late Midge Day. Midge was an inspiration to her students, and many of the key principles of law and ethics that she taught remain with me to this day and have guided me throughout my career. It’s also been my pleasure this year to be part of the President’s Panel, a group of alumni convened by DC president Don Lovisa to provide input on com- memorating this milestone anniversary — such as with the construction of the Centre for Collaborative Education — and to champion its significance out in the community. Through this experience, I have seen firsthand the exciting  developments  at the college that have taken place since I was a student, many of which go well beyond physical  infrastructure.  What I see at DC  these days is a remark- able  sense of  student  engagement  and school spirit. It was front and centre at the annual Harvest Dinner I attended last September at the W. Galen Weston Centre for Food, and more recently in the moving 50 Guitars for 50 Years event that brought students, alumni, retirees, and employees together in song.  Any- one watching the video of this gathering cannot help but be moved by the mes- sage and genuine enthusiasm of every- one involved. With six months of celebrations to go, DC alumni still have numerous oppor- tunities to get involved. Project Kronic, led by Toronto police and involving several other police servic- es including Durham police, resulted in the seizure of drugs, guns, and cash and led to 90 arrests and 485 charges, accord- ing to information released by police Fri- day. The year-long investigation focused on the Driftwood Crips, “a group that we’re alleging has shown an extreme pro- pensity for violence … and a blatant dis- regard for public safety,” Toronto Deputy Chief Jim Ramer said during a news con- ference. Cops in the GTA and beyond staged raids early Thursday, June 15, execut- ing 77 search warrants. Officers seized 18 firearms, including 14 handguns, cash deemed proceeds of crime, and drugs including fentanyl, a powerful opioid that’s been blamed for a rash of recent overdoses, police said. Among the hundreds of charges laid were 88 alleging participation in a crim- inal organization, as well as offences including robbery, firearms trafficking, kidnapping, and drug trafficking. More arrests are anticipated, police said. The investigation revealed the reach of the gang, which has established cells in communities across Ontario and beyond, police said. “Their involvement in guns, drugs, and violence formed a complex network,” Ramer said. PICKERING — Pickering is preparing a skateboard park strategy to guide the planning and development of skateboard facilities city-wide, and the public is invit- ed to provide input. City staff have recognized the current need for additional skateboard facili- ties within south Pickering, as well as the future need within the Seaton commu- nity. The strategy will provide direction on the number, location, size and style of skate parks needed to adequately service the community. Factors to be considered include: demographic data; recreation trends; inventory of existing and proposed park- land and their suitability for skateboard facilities; and resident, user and staff input. After two years here, following spells in Ottawa and Cobourg after moving from the west, I think Ajax has the most unappealing downtown of any I have come across. His- torical and architectural features are non- existent as council members and staff plan- ners seem to think that a downtown means a bunch of highrise condos and old (soon to be new) strip malls. Clearly this satisfies some residents but, hopefully, not all. The centrepiece of downtown, the town hall, is completely devoid of any memorable architectural features, looking more like a seniors’ centre than a centrepiece. Pickering city hall is no architectural gem, but at least it looks like a town hall. The thinking displayed by the Town of Ajax is, perhaps, best exemplified by the addition to the St. Francis Centre on Church Street. The building is in an histori- cal area (Pickering Village) where people are paid grants to preserve historical styles and colours. Yet Ajax added a chunk of blue- green glass to the original brick building. Since everyone in the design and approv- als process can’t be colour blind (can they?), the planners and decision-makers must be marching to a drummer who is either blind- folded or keeps his eyes closed. From a visual point of view, Ajax has many admirable things to offer residents. However, a striking downtown area isn’t one of them. Robert Dixon Ajax Parking solution needed for Pickering’s Douglas Park To the editor: I am the father of four kids, living and working in Pickering. My second daughter recently had a soccer meeting last night at Douglas Park. We got there around 6:55 p.m., I parked behind another car on the east side of Doug- las Avenue in front of a house. The west side of the street was no parking, and posted as such. We were only there for 12 minutes and got at ticket for parking within 1 metre of a drive- way/laneway, bylaw No. 6604/5. I understand the reasoning for this bylaw, I was about 2 feet from the driveway. This is a City of Pickering park. There were about 50+ parents there with cars. A lacrosse game was happening at the same time. So to sum up my daughter is playing Pick- ering-run soccer at a Pickering-run park, and this park has no parking! This is where she will be playing all summer. The only option is to park on the street, like everyone else. We got a $25 ticket after being parked for 12 minutes (ticket time 7:07 p.m.). If I don’t pay this ticket within seven days it jumps to $38.  I am sure I was not the only one to get a ticket. Oh sure, we’ve been drinking (and pro- ducing) more and more wine over the last few decades, and we’ve got an excellent whisky heritage. But when it comes down to it, beer still accounts for the lion’s share of money spent on drinking in this country. So what, then, could be a more Canadian way to celebrate Canada’s 150th birthday than a case of beer with brews from across the country? That’s just what Gary Lohin had in mind when he launched one of the most ambi- tious brewing collaborations in Canadian history. One by one, the brewers made their way to Surrey and brewed up their beer in Lohin’s brewhouse. “We’ve got a lot of history of beer in Cana- da. We were looking for something special to do to celebrate. This seemed like a good way to do it,” said Lohin, brewmaster of Central City Brewers and Distillers in the Vancouver suburb of Surrey, B.C. This is an Across the Nation Collabora- tion, which hits shelves across the country this spring. There are craft beers from 12 different provinces and territories. Lohin put out calls to breweries across the coun- try to come up with ideas for a brew that would be fitting for a national case. “We tried to get as many beers as possible that would really represent their brewer’s region, including using local ingredients where possible,” said Lohin. “We asked people for their top three beers that they wanted to do. Part of it was so we didn’t get like 10 IPAs.” Other breweries‚ big and small‚ are also celebrating Canada’s big birthday. Labatt is temporarily rebranding 50 as 150. Moosehead is doing a beer using only Canadian ingredients. And Scottish brew- ery Innis and Gunn has released Maple and Thistle Rye ale, aged for 150 days in oak barrels and using Scottish thistle flow- ers and Canadian maple syrup. In Ontario, the Across the Nation case is split up into a Western six-pack and East- ern six-pack, which are on LCBO shelves at $14.95 apiece. What could be a more Canadian way to celebrate Canada’s 150th birthday than a case of beer with brews from across the country? One by one, the brewers made their way to Surrey, and brewed up their beer in Lohin’s brewhouse. In each case, the breweries made an attempt to capture their province or territory’s spirit, either through a historical reference or a local ingredient. “The brewer from Northwestern Territo- ries made a grisette, which is a light style that would have been perfect for miners. Back in the frontier days, beer was safer to drink than the water,” said Lohin of the Miner’s Refresh Grissette from NWT Brew- ing. Another Northern brew, from the more well-established Yukon Brewing company, was a dark ale using local black currants. Manitoba’s Half Pints produced a saison using locally harvested wild rice. Ontario’s contribution‚ from Beau’s All Natural Brewing Co.‚ is a pale ale made with Ontario-grown peaches and spruce tips. In the case of the PEI Brewing Company, taking part in the unique cross-Canada project was a no-brainer, said owner Kevin Murphy. “Beer’s been part of the whole country’s history,” said Murphy, who pointed out that PEI’s premier at the time of Confeder- ation, Sir George Coles, was a brewer. “He was a father of Confederation and we use PEI maple syrup in the beer.” In those days, Murphy added, small, local breweries were part of the social fabric of towns across the country, so something which celebrates today’s craft brewing movement is a fitting nod to history. “It was part of every community. Every town had their own. A coast-to- coast toast to Canadian beer Patriotism tastes like Pure Canadian Maple Bacon Butter Tarts Matt Ness With Canada Day fast approaching, and in commemoration of its 150th year, I thought I’d put together a recipe that honours this great country that we live in. Now, I know that it’s summer, and some of us are still trying to keep our “beach bods” intact, but some of us also like to live a little bit. So for that I’ve included a not- so-healthy recipe. It’s perfect for entertain- ing as it’s a crowd pleaser, simple to make ahead, and it transports quite easily. Pure Canadian Maple Bacon Butter Tarts Nothing says Canada like a butter tart. In fact, butter tarts just come out and scream it loudly at the top of their lungs. They are surely a welcome treat to any table during a Canada Day celebration, and with my addi- tion of a hint of bacon they are destined to be the star of the show. Add on top of that the oozy-gooeyness that comes from 100 per cent pure Canadian maple syrup and you’ve got a 100 per cent winner. We pro- duce more maple syrup than anywhere in the world, and we just wrapped up a har- vest of the good stuff in March and April, so someone’s got to start using it up, right? Prep Time: 1 hour Cook Time: 20 minutes Serves: 14-18 Tarts Ingredients: 2 ½ cups all-purpose flour 2 ½ tbsp granulated sugar 1 ½ tsp salt 1 cup cold unsalted butter, cubed ½ cup cold water 4 slices of bacon ¾ cup brown sugar, packed ¼ cup butter, melted 1 cup Canadian maple syrup 2 eggs 1 egg yolk 2 ½ tsp apple cider vinegar 1 tsp vanilla Method: 1. In a large bowl mix together flour, sugar and salt. 2. Cut the butter into small cubes and add to the flour mixture. Using your hands, rub the butter into the flour until it resembles a coarse meal. 3. Add in the water and mix until it forms a dense dough. If it’s too dry add a teaspoon of water at a time until it comes together. 4. Shape into a flat disc, wrap and refriger- ate for about 30-45 minutes. 5. Meanwhile, render the bacon in a pan until just slightly crispy, reserving the bacon fat. 6. Mix the brown sugar and the warm but- ter with 2 tbsp of the bacon fat in a bowl, whisking until the sugar starts to dissolve. Add in the syrup, eggs, vinegar and vanil- la and mix until smooth. Strain through a sieve and set aside. 7. Preheat oven to 375. 8. Roll the chilled dough out to 2-3 mm thickness and cut out rounds of 3-4 inch diameter. Gently press into muffin pans. Refrigerate for about 15-20 minutes to allow the dough to relax. 9. Meanwhile, chop the cooked and cooled bacon. Divide bacon evenly amongst the shells and fill ½ to ¾ of the way with the fill- ing mixture. 10. Bake for approx. 20-25 minutes until the sides of the shells and golden and crisp and filling is just set. Let cool before remov- ing from the pan. Eat warm, cold, or freeze for up to 3 months. Among the types of fat, there are the “bad” fats, such as trans fats found in foods with hydrogenated vegetable oils, such as cookies, pastries or French fries, and saturated fats found in red meat, dairy and commercially prepared foods. The “good”, or healthy fats that your body needs are monounsaturated and polyunsaturated fats, and omega-3 and omega-6 fatty acids. I loved plants and the outdoors and the fact that I was a fourth generation winemaker made my choice easy. My wife Heidi and I decid- ed to move our family to Prince Edward County.”   After a great deal of research he chose a 74-acre plot of land in Cape Vesey, located on the peninsula at almost the far eastern tip of Prince Edward County. Almost sur- rounded by water the location had a wel- coming micro-climate. “My father, Giacomo, and I came upon this plot of land in very late autumn. The flora in most parts of the county as well as many parts of Ontario was pretty well dec- imated and leafless. He pointed out quick- ly that here trees still had green leaves and flowers were still blooming. This, my father exclaimed, was where the winery was to be.” Pat and Giacomo’s decision proved visionary. Concentrating on developing high quality wine from disease resistant and cold hardy vines they have succeed- ed in producing first-rate products from hybrid grapes such as Frontenac Noir. Frontenac Gris, Vidal. Baco Noir and St. Croix. However his biggest surprise was his desire to grow Pinotage. Pinotage is a South African grape — a cross between Cinsaut (or Cinsault) and Pinot Noir, which are both vinifera spe- cies. Growing Pinotage in a climate such as that of the county would be quite chal- lenging. On a trip to California, Pat became infatuated with this grape and became determined to successfully grow it in his vineyard. He had the warm micro-climate, but he needed more. He acquired Pinotage cuttings from a winemaker in British Columbia and he researched that by grafting to special wild riparia rootstocks, the vines not only could survive the cold winter but actually induce the grapes to mature much earlier. His success is evident in the superb Pinotage now on sale at the winery.   Del-Gatto Estates proves that hybrid grapes can produce quality wine if given quality care.
