She has had to deal with City Hall to get the lands she has needed and, in fact, the City of Oshawa has become a more than willing partner. There are well more than 30 gardens around Oshawa at this point, with more on the way. It’s one thing to provide someone with a meal. It’s something entirely different to give them the tools to make that meal themselves – on a continual basis. Construction started October 29 on a vacant piece of land on the west side of Simcoe Street just a stone’s throw north of Lakeridge Health. And it promises to be quite a stunning structure when it is finished in the Spring of 2017. The triple majority needed to change the composition has been reached. With the municipal election in Octo- ber 2018, Ajax and Whitby will each gain another Regional councillor, while Oshawa will lose two positions. Regional council will remain with 28 councillors and an elected chairman. The triple majority includes approval by Regional council, which happened on Sept. 14. Secondly, a majority of munic- ipalities must endorse the change and seven of the eight communities in Dur- ham did so. The only one opposed to the changes was Oshawa. And, the number of electors in munici- palities supporting the change make up a majority of electors. During the Regional council meeting on Wednesday, Nov. 9, Regional Chairman Roger Anderson said, “To those affected, you have 17 months to get your house in order.” With triple majority reached, Durham council composition to change Roger Anderson Durham school board hosts tech expo Nov. 19 DURHAM -- The Durham District School Board is hosting its second Technology for Learning and Life Expo this Saturday. Create tasty Candied Apple French Toast and granola For part of my career I sailed the seven seas as a private yacht chef (or more accu- rately, motored the seven seas), says Sarah Groen of the Berry Hill Food Company in Oshawa. Guests’ breakfast on board is a relaxed and casual affair with lots of treats to choose from... a fruit platter, locally sourced pastries, cheeses, breads, lovely butters col- lected through our travels, and a favourite treat that I would serve at least once each trip... Candied Apple French Toast. Remi- niscent of apple pie, this is dessert cleverly disguised as breakfast! 4 large eggs 5 ½ ounces heavy (35 per cent MF) cream, divided 1 baguette, cut on the diagonal into ½ cm slices 6 tablespoons butter, divided 2 firm apples (honey crisp; Fuji; Braeburn), peeled cored and sliced ½ cup packed brown sugar 1 ounce apple brandy Whisk together eggs and 3 ounces heavy cream until blended. Set aside. In a large skillet over medium heat, melt 3 table- spoons butter. Working in batches, quickly soak bread slices in egg mixture, place in skillet and cook until golden brown on both sides, turning only once. Set toasts in a low oven (200°F) while fry- ing remaining bread slices. In a medium saucepan over medium- high heat, melt remaining 3 tablespoons butter, add apple and sauté until golden brown, then add brown sugar and apple brandy and stir until sugar melts. Whisk in remaining 2 ½ ounces cream (be care- ful, mixture will bubble and spurt!) and cook until sauce reaches desired thickness. Arrange toasts on a warmed serving platter, spoon over hot apple-caramel sauce, sprin- kle with powdered sugar and cinnamon, if desired. Serve immediately. From the time I can remember, I’ve always loved granola. And I knew creat- ing a signature blend for The Toasted Wal- nut would be an instant hit, especially to enhance our fresh fruit yogurt parfaits, says owner Nicole McGarry. Together with my sister-in-law we set out to make a flavourful granola that had to be all-natural, not overly sweet, and have an amazing crunch. After several test batches we landed on the most exquisite granola. Judging by the amount we go through daily, our customers heartily agree. Granola 5 cups rolled oats 1/3 cup pumpkin seeds 1/3 cup sliced almonds 1/3 cup walnuts pieces 1/3 cup sunflower seeds ½ cup shredded coconut 1 teaspoon cinnamon ¼ cup butter ¼ cup honey 2 teaspoons vanilla ½ cup dried cranberries ½ cup raisins Preheat oven 350°F. Line a rimmed bak- ing sheet with parchment paper. Set aside. Mix the first seven ingredients in a bowl. Set aside. In a saucepan over medium heat, melt butter, add honey and vanilla and let mix- ture come to a light boil then pour over top of oat mixture and toss well to combine. Spread oat mixture evenly into prepared baking sheet, set on centre rack and bake for 10 minutes, then stir and flip granola over and bake until golden brown, about 5 minutes more. Remove granola from oven, toss with cranberries and raisins and let mixture cool completely at room temperature. Consider, for example, Spain with its paella, India’s biryani, the Persian Gulf’s jambury and endless others. However, this dish, special to East Asia, stands in my opinion, at the top. This is my version of a rice and shrimp dish found in most countries of East Asia. I have developed a new version because of my great love for coriander and garlic mixed with shrimp. Asian Fried Shrimp and Rice Serves about 6 2 tablespoons butter 8 cloves garlic, crushed 2 tablespoons finely chopped fresh coriander 1/2 pound peeled and deveined raw shrimp 1/2 teaspoon salt 3/4 teaspoon black pepper 4 tablespoons olive oil 1 large onion, thinly sliced 1 tablespoon fresh ginger, grated 3 cups cooked medium or long grain white rice 1 cup fresh or frozen peas, thawed 3 eggs, beaten 2 tablespoons soy sauce Melt butter in a frying pan. Stir in the garlic, coriander, shrimp, 1/4/teaspoon of the salt, and 1/4 tea- spoon of the pepper then stir-fry over medium heat for 5 minutes or until shrimp is cooked. Remove from heat, cover, set aside and keep warm. Heat olive oil in another frying pan then stir-fry the onion and ginger over medium-high for 3 minutes. Stir in rice, peas, and eggs then stir-fry for 3 minutes. Stir in the soy sauce and the remaining salt and pepper as well as the reserved shrimp with its scrapings. Many things affect the price such as exorbitant taxes, demand, production, labour intensity, marketing, reputation, etc. Sometimes the higher the cost, the more reflective the wine is to the actual terroir of the region it is made in. Also, expensive wine is usually made to age and develop for long periods of time thus may be found harsh when consumed young. So you get the picture. Expensive wines do not necessarily a pleasure make. There are, however, reasonably priced wines of good quality that will satisfy immediately but will reward some cel- lars aging. I recently tasted several of these wines. Those planning to ‘stock up’ for their holiday cellars may wish to take note. South America has some very tasty items. The La Mascota Cabernet Sauvignon (LCBO #292110 $13.95) from Argentina is a dark red full-bodied wine with deep cherry, plum and earth flavours. Another excellent Argentine is the estate bottled Malbec Pascual Toso (LCBO #35170, $13.95) with raspberry, plum, licorice and spice flavours. The Carmenere grape was almost for- gotten until found growing in the vine- yards of Chile. This spicy relative to the Merlot offers great value in the estate bottled Santa Alicia (LCBO #309302, $12.95). This silver-medal award winner has loads of black fruit, chocolate and spice fla- vours. The wines above will be a fine match for any festive meal. If white wine is desired, then Remy Pannier’s Sauvignon Blanc (LCBO #471318, $12.95) from Val de Loire in France with crisp citrus and apple fla- vours will prove an inexpensive treat. It is great as an aperitif or just as great with oysters, salads or fowl. If it’s a sparkler that you fancy, then you can’t go wrong with the Avondale Armilla Blanc de Blanc from an ancient (1693) farm in South Africa (Vintages #451930, $29.95). Made in the ‘Tradi- tional Method’ and toasty with apple, pear flavours and a medium body, this wine is a steal at the price.
