I am not denying there is a
growing problem with child pover-
ty, not only in this country, but also
around the world. Feeding and
housing these families is the short-
term priority. But the long-term pri-
ority is to teach people how not to
fall into the cycle of poverty in the .
first place. The story rightly points
out the social trend toward single -
parent families is a major factor in
the rise of child poverty locally.
I do object to the material defin-
ition of poverty, however. The chil-
dren who find themselves without
the top-of-the-line athletic shoes
are not lacking. They, are not poor.
They simply live traditional lives in
the midst of a narcissistic society
that values gluttony and material
excess to the point of self-destruc-
tion.
Many of these so-called "poor"
children are actually very "lucky"
in a way. They may be the only
ones who have a chance of remain-
ing truly sane in a society gone
crazy. If they could only be taught
to realize that leading a life of mod-
eration makes them an asset to the
future of the world; this would go a
long way toward boosting their
self-esteem. These children may be
the world's only, hope in breaking
our society's spiral into an oblivion
of wasted resources, mountains of
garbage and environmental de-
struction.

been enjoying turkeys — stuffed
and unstuffed.
Whether you choose to stuff
your turkey or cook stuffing in a
casserole dish is a matter of person-
al preference. But, as with any
preparation involving raw food in-
gredients, it's important to carefully
follow proper food safety and han-
dling procedures to ensure a safe
turkey every time.
For consumers who choose to
stuff their turkey, Ontario Turkey
Producers' Marketing Board recom-
mends the following guidelines.
• Prepare stuffing just before plac-
ing in turkey. Use only cooked in-
gredients in stuffing — saute veg-
etables, use only cooked meats and
seafood (oysters) and use pasteur-
ized egg products instead of raw
eggs. Place prepared stuffing in
turkey just before roasting. Do not
stuff the turkey the night before
roasting.
• Stuff both neck and body cavi-
ties of completely thawed turkey, al-
lowing 1/2 to 3/4 cup of stuffing per
pound of turkey. Do not pack stuff-
ing tightly in turkey.
• Always use a meat thermometer.
The turkey is done when the thigh
temperature reaches 180°F on a
meat thermometer inserted into the
thickest part of the thigh next to
body, not touching bone. Move the
meat thermometer to the center of
stuffing; temperature should be 160
to 1650R When the stuffed turkey is
done, remove turkey from oven and

3. Reheating tip: layer slices of
turkey with washed lettuce or cab-
bage leaves. Cover and heat- in mi-
crowave or oven.
4. You can store a turkey in the
freezer for up to one year. The
turkey will be safe if frozen for a
longer time period than one year
but the texture and flavour will
begin to deteriorate.
The best way
to roast turkey
• Place thawed or fresh turkey,
breast up, on a flat rack in a shallow
pan, 2 to 2-1/2 inche&.deep.
• Insert oven -safe meat thermome-
ter into the thickest part of the thigh.
• Brush or rub skin with oil to pre-
vent drying of the skin and to en-
hance the golden color.
• Place in a preheated 325F oven.
• When the skin is a light golden
color and the turkey is about two-
thirds done, shield the breast
loosely with a tent of lightweight foil
to prevent overcooking of the
breast.
• Turkey is done when the meat
thermometer reaches the following
temperatures:
- 180 to 185F deep in the thigh;
also, juices should be clear, not
pink when thigh muscle is pierced
deeply.
- 170 to 175F in the thickest part of
the breast, just above, the rib
bones.
160 to 165F in the center of the
stuffing, if turkey is stuffed.
• Let turkey stand for 15-20 minutes
before carving to allow juices to set.

PICKERING - The chairman of
the Altona Forest Stewardship Com-
mittee is asking residents to be on the
lookout for vandals in the forest after
approximately 30 trees were cut
down during the past two weeks.-
"I

aware of this. There is vandalism
going on, said Larry Noonan, co-
chairman of the committee, who first
discovered 16 trees had been cut
down about two weeks ago when he
was out for a walk.
Now he said up to 30 have been
cut, including an assortment of elm,
maple, white ash, white cedar, cherry,
ironwood and yellow birch that have
"been cut down at odd heights... with
axes and saws."
He estimated the trees, which -
would cost about $20,000 to replace,
range in age from five to 40 years
old.
"The majority of the ones they're
cutting down are about 20 years old,"
he said, noting most are tall and skin-
ny.
"They're cutting trees that are
moveable," he said, wondering if
someone plans to return for the trees
and use them as firewood.
Mr. Noonan said he's reported the
damage to the Toronto and Region
Conservation Authority (TRCA),
which is responsible for the 52.7 -
hectare forest that stretches from
Stroud's Lane north to Finch Avenue
and from Rosebank Road west to Al-
tona Road. The forest was designated
an environmentally significant area
in 1982.
"I want these people stopped," Mr.
Noonan said, noting the area is a nat-
ural forest that has all sorts of birds
and wildlife as well as some rare
trees. "For people to go in and chop
down trees is terrible "
Mike Fitzgerald, east zone super-
intendent for TRCA, reported the au-
thority repaired a hole in the fence
bordering the forest Tuesday where
it's believed the vandals entered. He
noted staff will be increasing their
visibility in the area.
"We're trying to educate the
neighbourhood and the community
and we will be approaching local
schools to educate (students) on the
sensitivity of the area," he said.
He added conservation authorities
have the ability to charge individuals
who damage authority property under
the Conservation Authority Act, but
said, "we're hoping education will be
the key to our success."

This is probably the most ludicrous statement I have
come across in years. In my 25 years as both Lender
and Broker, I can not remember the.Bank of Canada
not raising rates to at least the same level as the U.S.
, and in the majority of cases surpassing the U.S.
increase by 20 to 50 bases points.
Unfortunately even though I personally feel
that these people are "out to lunch", look for a 1/4%
to a 1/2% increase based on the U.S. increasing rates
by 1/4% over the next few months.
