Surprise, surprise: it'simpossible for renters onan average income toswitch from their current abodes to what qualifies as"starter" homes in Dur-ham's three largest cities. That's the finding in arecent real estate report bypoint2homes that looked atthe average after-tax household income earnedby renters in Oshawa,Whitby and Ajax and as-sessed how much more in-come would be required toafford payments for astarter home in those mar- kets.To be clear, a starterhome is defined in the realestate report as one that is exactly half the value of theaverage benchmark homeprice at the time the report was compiled. That meansthe starter home in Osha-wa was valued at $429,800,while ones in Whitby were priced at $542,500 andthose in Ajax at $520,850.(Double those home values for average home prices inthose markets).The report said an aver-age renter would require an after-tax household in-come of $134,123 in Whitbyto cover all the costs in- volved in paying for a start-er home in Whitby. Howev-er, Statistics Canada infor-mation reveals current Whitby renters have an af-ter-tax household incomeof $67,880, which is about half (49 per cent) of whatthey would need to afford astarter home. The $134,123 minimumafter-tax household in-come in Whitby needed toafford a starter home cov- ers the $108,500 down-pay-ment of 20 per cent, plusyearly mortgage payments of $40,237 (assuming a 5.75per cent fixed mortgage ona25-year mortgage, the to-tal should not exceed 30 per cent of a renters' income).The results are similarin Ajax, where renters' af- ter-tax household incomesaverage $70,422. To affordthe costs required for a$520,850 starter home in Ajax, an after-tax house-hold income of $128,404 isrequired, which covers the 20 per cent down-paymentof $104,170 plus a 25-yearfixed mortgage at 5.75 per cent of $38,521 annually.The pay gap isn't quite aslarge in Ajax as in Whitbyfor renters to become own- ers but is still about $58,000or 55 per cent of what theywould need in after-tax in- come annually.The gap is closer in Osh-awa, where renters have anaverage after-tax income of $67,880, while an after-taxhousehold income of$109,683 yearly would be re- quired to afford a $429,800starter home.That covers the 20 percent down-payment of $85,960, plus a 25-year fixedmortgage at a 5.75 per centrate of $32,905. Simpson said there arelike-minded businessespopping up in Bowman- ville, Whitby and Picker-ing and said diners havewelcomed his concept."The reception we got from diners is, 'oh we're sohappy to have somethingdifferent and unique totry'," said Simpson, adding the feedback has beennothing but positive.Dave Hawey is a profes- sor and the co-ordinator ofculinary programs at Dur-ham College. He is also achef with 43 years of expe- rience.He said he's seen majorchanges in the local food scene in Durham in recentyears. Inspired by socialmedia and the Food Net- work, Hawey said peopleseem to be excited about re- turning to their roots oflearning where their foodis from, getting to know lo-cal butchers and bakers and finding local farms topick up produce."Heading to the local farmers market becomesan institution and there'sso many interesting people producing food in the re-gion," he said. Field-to-fork is a majorfocus at Durham Collegeand students in the culi-nary program get a chance to harvest food grown atthe college's Whitby cam-pus and then cook with it. "The students absolute-ly love it," said Hawey.Durham has also seen an explosion in interna-tional restaurants and gro- cery stores. One of the larg-est booms has been inSouth Asian food, includ-ing Indian and Sri Lankan food. Hungry Durham resi-dents can choose anythingfrom street-food dishes to fine dining and the food isauthentic.International grocery stores across Durham haveawide range of ingredients not always available inchain grocery stores, al-lowing both home and pro- fessional cooks to experi-ment."Right now global cui-sine is very trendy, so learning the ingredients,the recipes, the spice mixesof different cuisines, andone of the things that reallyseems to be coming back isfusion cuisine," Haweysaid. While the fine diningscene in Durham has ex-panded from Whitby toBrooklin to Uxbridge and Port Perry and Bowman-ville, the pandemic haschanged habits for many casual diners, including aproliferation of takeout.Indeed, since the pan-demic, many local restau- rants have expanded take-out and reduced operatinghours, including cutting lunch service or even someweekdays, and reducedsquare footage."The takeout scene has boomed and I think thisyounger generation, theones that are 18 to 30 years old, maybe pushing a littleolder than 30, they're verycomfortable orderingthings online," Hawey said.As for Hawey's favouriteplace to eat in Durham?"I don't have a favouriteplace to eat in Durham, butDurham is one my favou-rite places to eat because there's so much choice andso much variety, so I can goanywhere (in Durham)and get an amazing meal and an amazing dining ex-perience in this area." With summers that feel as short as ours, the few long weekends we have are sacred.And, this year, there’s an extra reason to cel- ebrate Canada Day: Our population just reached 40 million. It’s time for a little party. If you’re entertaining family, friends and neigh-bours this year, here are some recipe ideas that won’t have you tied to the oven or grill all day – either make-ahead, or set-it-and-forget-it. Feeding a crowd With a backyard and barbecue, apps are easy – just grill corn on the cob, skewers of chopped veg- etables and flatbreads. No backyard, no problem: All you need is an oven and regular basting. Prep can be done in advance, and they don’t need too much attention during your gathering. As for the main event, chef Jonathan Tjerkstra has two favourite party dishes to feed a lot of people. And he’s certainly the expert here – his catering and food truck company Jonny Blonde serves big events throughout Niagara, Hamilton and the GTA. “First up, I would say for a vegetarian dish, I think you want something fast and casual,” Tjerkstra says. “I like to call it ‘grown-up’ mac and cheese.” Cheddar is the classic cheese here, but Tjerkstra likes “grown-up” options to bring the comfort dish to the next level – Five Brothers cheese from Newfoundland and Labrador is a personal favou- rite, which combines traits of creamy Gouda and Swiss Appenzeller, as well as Frère Jacques, a sweet and nutty cheese made by monks in Quebec. An easy béchamel sauce also works, he adds. “And it’s definitely something that can be pre- pared ahead of time, which is really nice,” Tjerkstra says. “If you make the sauces, allow them to cool, cook the noodles, allow them to get cool. Mix them together, and then you bake with some kind of cheese or bread crumb topping on it, or a mix- ture of both. It’s going to turn out really, really nice.” To impress your meat eaters – and if you can afford to splurge a little – Tjerkstra loves a prime rib for Canada Day. It feeds a lot of people and suits a party night that ends in fireworks. “I honestly think it’s the biggest crowd-pleaser,” he says. “Now, it’s big, but it really doesn’t require too much in the way of process.” There are countless prime rib recipes to choose from online, baked or grilled, but Tjerkstra loves this main course because it’s hard to mess up. “Like, even if it’s bad, it’s good,” he says. “Same with mac and cheese. The only thing you can do to ruin it would be maybe to add too much salt.” Pairing a cut of prime rib with a side of mac and cheese is great match, Tjerkstra says – just add a blob of blue cheese on the beef. A sweet finishA light finale is refreshing after cheesy pasta and heavy meat mains. Although butter tarts and Nanaimo bars are beloved Canadian classics, one historic Maritime dessert goes all the way back to the 1700s. Blueberry Grunt was named after the sound of simmering and bubbling blueberries, which French settlers would cook slowly in pots over fires, according to Parks Canada Heritage Gourmet Recipes. These workers were building the Prince of Wales Fort on Hudson Bay, an effort that took more than 40 years, and blueberries were plentiful in the region. A tea biscuit was dropped on top of the stewing berries, completing the dessert. Preheat an oven to 375 F. For the berries, mix 4 cups blueberries, 2/3 cup sugar and 1/2 cup water in a pot; cover and boil gently until a lot of juice is released. For a traditional tea biscuit, mix 2 cups flour, 4 tsp baking powder, 1/2 tsp salt and 1 tsp sugar in a bowl. Cut 2 tbsp of butter into the flour and add 1/2 cup milk or buttermilk. (Some modern recipes call for a lot more butter – modify the pastry as you please.) Drop spoonfuls of dough onto the hot blueberries, then bake for 15 minutes. Today, it’s popular to dollop a scoop of vanilla ice cream on top – a perfect finish for a summer gathering, fresh berries and cool ice cream. Get ready for fireworks. Jean was the youngest child of Richard and Alice Best. She grew up in Grand Cascapedia, Quebec. Always wanting to please her older siblings; Amy, Clem, Lawrence, Lila and Leona. Predeceased by baby brother Percy. Born in 1927, Jean was 95+ years and the last surviving member of her family. Jean leaves to mourn her daughter Brenda (James Morrison), grandson Jeffrey (Liz), granddaughter Sarah (Jamie McNally), and great- grandchildren Georgia and Weston. They were all the highlight of her life! Predeceased and never forgotten son Larry in 1992, husband Ralph in 2012. While living and working in Ajax from 1966 to the present, Jean was a member of St. Paul's United Church and made many friends there. In her retirement she enjoyed trips to the Gaspe Peninsula, her coffee shop afternoons with Anne, Judy, Ruth, and the late Helen. Jean was an excellent cook, baker, and seamstress. Time with family and friends always gave her great joy. Jean lived independently after her husband's death until a fall altered her way of life. No longer able to live on her own, Chartwell Ballycliffe became her new home. She amazed staff with her excellent mem- ory of names and birthday dates, knowledge of a variety of topics. She made many friends there, and was respectful to all in her surroundings. Many hearts are broken with the loss of our mother, grandmother, great-grand- mother, aunt, cousins, friends, and neighbours across our country. Visitation and Funeral Services for Jean were held at the McEachnie Funeral Home, 28 Old Kingston Rd., Ajax on Thursday, June 15, 2023. Interment followed at Pine Ridge Memorial Gardens.
