Just days after opening herfamily business — SpademanTree Farm — on Nov. 19, You-mans was contemplating closingthe gates for the season after see- ing her stock of available cut- your-own trees nearly depletedby buyers flocking to secure aChristmas tree."We've essentially almostreached our max in the field for the season if we continue to allow people to cut trees," said You-mans near the end of November."We would love to continue sell- 'WE CANNOT KEEP UP WITH THE DEMAND' See HIGH,page 6 CHRIS HALL chall@durhamregion.com Mike Cormack, owner of Cormack's Christmas Tree Farm, with his dogs Bella and Addie. "The idea was to do anartist collaboration withfull transparency, we alljust split the rent," said Anne Kouvas, owner of Ana's Fizz, who spearhead-ed the pop-up with fellowfounder Michelle Van derwalt, owner of Purple Ac- cent Vinyl."I got tired of paying or-ganizers an outstandingamount of money for a one- day show," she continued, noting table fees could be ashigh as $200 for a six hour event during the holidayseason, leaving some mak- ers struggling to even makeback their fee on any givenday. In addition to getting a break on fees, participating makers at Treasures Pick-ering have also found some-thing more."We support each other," Kouvas continued. "Every-body's really happy to behere and not paying crazyfees." For Nicole Hanley, own-er of UC Art, the pop-up isher first experience sellingin person rather than through her online Etsy shop."It's really nice getting totalk to people and see theirfaces when they see the products," said Hanley, whosells handmade wands, DIYwand kits, homemadewreaths and more. She also pointed to the camaraderieof the shop as a benefit."During downtime we walk around and chat, someone might say 'oh, I saw this and it reminded meof you' and tell you a newtechnique or a tip, it's beena really good learning expe- rience for me, having neverbeen in a show before."Tharwat Awamleh, owner of Bread & Salt FineFood, said the shop has been a great boost duringthe busy holiday season."It's absolutely needed, especially coming out of COVID when small busi-nesses were hit the most,"she said. "It's mostly wom- en entrepreneurs, who tooka huge risk to start their businesses, and it's beengreat, we need more thingslike this."The shop features a range of products, from thewood working of Chez LisDesigns to clay jewelry from Pink Plumeria, crys-tals from Rosie Young De- sign Studio, honey and oth-er bee-themed items fromGraziotto's Bee All, craftand seasonal items from Crafter Ever After, It Takes Two, Purple Accent Vinyland more, and bath andbeauty products from Ana'sFizz and others. "There's something foreveryone," Awamleh add-ed. "Once people come, theyget hooked." The pop-up runsthrough Dec. 23, althoughthe model is something or-ganizers Kouvas and Van der walt said they would love to recreate in the fu-ture."All the people whocome in really enjoy seeing all the small businesses to-gether," said Van der walt."That's the most enjoyablething." Katherine Ross, Waste Management Technician for the Region of Durham talks everything Waste. Send your waste related questions or comments to waste@durham.ca If you require this information in an accessible format, please call 1-800-372-1102 •durham.ca/waste As the song goes, “It’s the most wonderful time of the year”! However, the holiday season can also be one of the most wasteful times of the year. The traditions of giving gifts, decorating your home and entertaining friends and family can mean a lot of extra waste to manage. There are many opportunities for you to rethink, reduce, reuse, and recycle the remnants of holiday cheer. When shopping:Bring your own reusable tote bag rather than accepting a separate plastic bag for each purchase. Remember to buy products that contain reduced amounts of packaging or packaging which can be recycled in your blue box. Give gifts that last or give a shared experience, like tickets to a movie, concert, or sporting event. Holiday Parties:Use cloth napkins, silverware, glass drinking cups and ceramic coffee mugs, and reusable plates rather than disposable plastic or styrofoam at holiday parties. Rent party furnishings rather than buying things you will only use once a year. Compost:Compost any leftover food scraps in your green bin. Consider donating canned or dry goods you don’t need to local food banks. Please check that boxes and cans are not damaged, open, or expired. Batteries:Do your presents include electronics and talking furry friends? Be sure to stock up on rechargeable batteries, a great gift idea that keeps giving even after the holidays. Be sure to save all your spent batteries for the curbside battery recycling collection in April. Donate items to charity:New gifts will often replace appliances, toys and clothes that still have a useful life. Donate items to charity or post items that are in good condition in your local buy and sell group. Rethink, reduce, reuse and recycle gift wrap:Don’t use wrapping paper. Just add bows to holiday shopping bags or gift boxes. Wrap gifts in newspaper or old magazines. Get creative with fabric and use dishtowels, or scarves, which can simply be washed and reused. Give gifts in baskets, tins, or jars. Save bows, ribbons, and gift bags to reuse next year. Recycle your gift wrap in the blue box. Foil and metallic wraps should be put in the garbage. Recycle packaging:The holiday season creates a tremendous amount of cardboard waste. Be sure to flatten small boxes, and place securely in your blue box, or place flattened and tied cardboard bundles on top your blue boxes. E-recycle:Now that you’ve got that new tablet, flat screen, or camera, take your old electronics to your local Waste Management Facility for recycling or look for curbside collection programs available in your area. Check our website (durham.ca/waste) for more information. Christmas trees:Once the big day has passed and the ornaments are safely packed away for next year, there’s just one thing left to do. Christmas tree composting helps return a renewable resource back to the environment. Please remove all tinsel, decorations, ornaments and stands prior to placing your tree outside for collection. Do not place your Christmas tree in a plastic tree bag, as it won’t be collected. Please ensure trees are not buried in snow or frozen to the ground. Check your waste management calendar for collection dates in your area. Get the app:Make garbage day easier over the holiday season. Download the free Durham Region Waste App or Whitby Waste Buddy App through Google Play or the App Store. We’ll remind you the day before collection of what’s being collected that week. Remember, it’s a season for giving, not discarding. Happy holidays from the Region of Durham Works Department. Though those people come from all walks of life, it’s likely that no group is as taken by the unique spirit of the holiday season as much as children. Whether they’re looking forward to Santa’s arrival or preparing for a school holiday pa- geant, kids have much to be excited about come December. Parents can channel that en- thusiasm by involving kids when decorating around the house this holiday season. • Make homemade ornaments. The op- tions are limitless when making holiday orna- ments with children. From simple ornaments made from pine cones picked up outside to more complex projects designed for children nearing adolescence, parents can look to the internet to find design ideas and directions for hundreds of ornaments. • Let kids lead the way when decorating the tree. Families that celebrate Christmas can let kids lead the way when decorating their Christmas tree. Kids are likely to spend the weeks leading up to Santa’s arrival gazing in awe at the tree, and knowing they decided where to place the various ornaments on it might make the season even more special for youngsters. • Include kids in culinary decor. Many ce- lebrants cannot imagine a holiday season wit- hout gingerbread houses and cookies. These traditions provide another great opportunity to involve children in holiday decorating. Set aside some time to make homemade gingerb-read houses, which can be used as decora-tions before they’re ultimately eaten. Cookies may not have the shelf life of a typical ginger-bread house, but kids can pitch in and deco-rate cookies prior to a holiday party or family meal. The spirit of the holiday season can be seen on the faces of children each December. In-viting kids to pitch in when decorating for the holidays can make the season even more spe- cial for its youngest celebrants. (Metro Creative) Simple wayS to involve kidS in holiday decorating Are you in the mood for crafting? Here are a few ideas to help you decorate your home for Christmas. 1. String tree Cut a triangle out of cardboard and wrap a string around it until it’s completely covered. Make sure to glue the string at the beginning and end to keep it from unrolling. Decorate your tree with pompoms, se- quins or tiny multicoloured beads to give it a festive look. 2. Paper Santa Paint almost half the surface of a white paper plate red. Draw the red paint down one side of the plate, creating a rounded, tapered edge to form Santa’s hat. Colour everything else beige. Then, draw Santa’s eyes and nose. For the finishing touch, glue cotton balls all over the bottom of Santa’s face and around the edge of the tuque to make it look like his beard and hair. 3. Winter landscape Glue a large black circle in the middle of a coloured piece of cardboard. Glue a white half-moon on top to hide the bottom of the circle. This will create snowy ground and night sky. Glue two bottle caps on top of each other in the middle of the landscape to form a snowman. Draw a face on the bottom of the top cap and buttons on the lower one. Then, make Christmas trees out of green and brown cardboard and glue them to each side of your snowman. Finally, if you want it to look like it’s snowing, sprinkle white confetti in the sky. Now, all you have to do is display your work! SOUR CREAM COOKIES Makes 22 cookies INGREDIENTS • 11⁄2 cups all-purpose fl our, spooned and leveled • 1 teaspoon baking powder • 1⁄4 teaspoon salt • 1⁄2 cup (1 stick) unsalted butter, softened • 3⁄4 cup granulated sugar • 1 large egg, at room temperature • 11⁄2 teaspoons pure vanilla extract • 1⁄2 cup sour cream, at room temperature Vanilla Buttercream Frosting • 1⁄2 cup (1 stick) unsalted butter, softened • 11⁄2 cups powdered sugar • 1 tablespoon heavy whipping cream or milk • 1 teaspoon pure vanilla extract • Gel food coloring (optional) DIRECTIONS 1. To make the cookies: Preheat the oven to 350 F. Line two large baking sheets with parchment paper or silicone baking mats and set aside. 2. In a large mixing bowl, whisk together the fl our, baking powder and salt until well combi- ned. Set aside. 3. In the bowl of a stand mixer fi tted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter and granulated sugar together for 1 to 2 minutes, or until well combined. 4. Mix in the egg and vanilla extract until fully combined, making sure to stop and scrape down the sides of the bowl as needed. 5. Mix in the dry ingredients in two additions, alternating with the sour cream. Make sure to mix in each addition until just combined, and be careful not to overmix the batter. 6. Using a 11⁄2-tablespoon cookie scoop, scoop the cookie dough onto the prepared baking sheets, making sure to leave a little room between each one. 7. Bake for 14 to 16 minutes, or until the tops of the cookies are set and spring back when tou- ched lightly. Remove from the oven, and allow to cool on the baking sheets for 10 minutes, then carefully transfer the cookies to a wire rack to cool completely. 8. To make the vanilla buttercream frosting: In the bowl of a stand mixer fi tted with the whisk attachment or in a large mixing bowl using a handheld mixer, beat the butter for 1 to 2 mi- nutes, or until smooth. Add the powdered su- gar, 1⁄2 cup at a time, mixing in each addition until well combined. 9. Add the heavy whipping cream, vanilla ex- tract, and gel food coloring (if using), and continue mixing until fully combined. 10. Once the cookies have cooled completely, spread the frosting on top of the cookies. 11. Store the cookies in an airtight container at room temperature or in the refrigerator for up to 4 days.
